  • 2 oz vanilla whipped cream, divided between each drink (optional)

Instructions

  1. Make the cherry simple syrup: Combine the halved and pitted cherries with 1 oz water in a shallow saucepan over medium heat. Cook until the cherries soften and break down, then stir in ¼ cup sugar until fully dissolved. Remove from heat once the sugar is incorporated. Strain the mixture through a fine mesh strainer to remove solids and skins, resulting in a smooth syrup. Let cool before use. Store leftover syrup in an airtight container in the refrigerator for up to one week.
  2. Mix the cocktail: In a cocktail shaker filled with ice, pour in 6 oz clear rum, 1 oz orange liqueur, 4 oz blood orange juice, 6 oz pineapple juice, and 2 oz cherry simple syrup. Seal the shaker tightly and shake vigorously for about 10 seconds to fully blend and chill the ingredients.
  3. Serve: Using a Hawthorne strainer, pour the shaken cocktail evenly over ice into two highball glasses. Optionally, top each drink with 1 oz vanilla whipped cream and garnish with a fresh cherry. Serve immediately.
  4. For parties: To make a pitcher for serving, multiply ingredient quantities by 4 to yield approximately 38 oz of cocktail. Mix and serve over ice, garnishing as desired.
