Ingredients

Scale

Caramelized Onions

  • 1 tablespoon extra virgin olive oil
  • 2 large Vidalia onions (about 1 1/4 lbs, peeled and sliced)
  • 1/4 teaspoon kosher salt
  • Black pepper to taste

Roasted Green Beans

  • 2 pounds green beans, trimmed
  • Olive oil spray
  • 1/2 teaspoon kosher salt
  • Black pepper to taste

Instructions

  1. Preheat oven. Preheat your oven to 425 degrees Fahrenheit to prepare for roasting the green beans.
  2. Caramelize onions. Heat a large nonstick skillet over medium-high heat and add 1 tablespoon of extra virgin olive oil. Add the sliced Vidalia onions, then season with 1/4 teaspoon kosher salt and black pepper to taste. Cook, stirring frequently, until the onions begin to brown, about 10 minutes. Reduce the heat to medium-low and continue cooking, stirring often, until the onions are deep golden brown and very soft, about 30 minutes.
  3. Prepare green beans. While the onions cook, arrange the trimmed green beans on a sheet pan. Spritz all over with olive oil spray and season with 1/2 teaspoon kosher salt and black pepper to taste.
  4. Roast green beans. Place the sheet pan in the preheated oven and roast the green beans until tender-crisp, about 18 minutes, turning them halfway through cooking for even roasting.
  5. Combine and serve. Transfer the roasted green beans to a serving platter and top them with the caramelized onions. Serve the dish hot as a flavorful side.

Notes

  • Vidalia onions are preferred for their natural sweetness but any sweet onion variety can be used as a substitute.
  • Be patient while caramelizing onions; cooking them low and slow brings out the best flavor and texture.
  • Using olive oil spray for the green beans helps to get even coverage without excess oil.
  • If you prefer, you can roast the green beans and caramelize the onions in advance; reheat before serving.
  • Adjust seasoning with salt and pepper to taste just before serving to keep flavors balanced.
