Instructions

  1. Prepare Carrots: Clean the carrots thoroughly or peel the skin using a vegetable peeler. Rinse them under cold water and towel dry completely. Place the carrots on a baking sheet (for oven method) or in an air fryer basket sprayed with coconut oil (for air fryer method).
  2. Make the Glaze: Melt the butter in the microwave or on the stove. Stir in the honey and brown sugar until they dissolve completely, creating a smooth glaze.
  3. Season and Glaze Carrots (Oven Method): Spray the carrots lightly with coconut oil spray. Season evenly with salt and pepper. Drizzle the honey-brown sugar glaze over the carrots and sprinkle fresh thyme leaves on top.
  4. Roast Carrots: Preheat the oven to 425°F (220°C). Roast the carrots for 40 minutes, flipping them halfway through cooking. Test tenderness with a fork; roast until fork-tender and caramelized.
  5. Season and Air Fry (Air Fryer Method): For air frying, season the carrots with salt and pepper first, then air fry at 375°F (190°C) for 25 minutes, shaking the basket halfway through. After cooking, coat the carrots with the brown sugar and honey glaze and toss with fresh thyme before serving.

  • If rainbow carrots are unavailable, orange carrots work well as substitutes.
