  • 3/4 cup (68g) freshly grated carrots (about 1 smallish medium carrot, peeled)

Instructions

  1. Mix Dry Ingredients: In a medium bowl, whisk together the instant oats, whole wheat or gluten-free flour, baking powder, ground cinnamon, and salt until well combined.
  2. Combine Wet Ingredients: In a separate bowl, whisk the melted and cooled coconut oil or butter with the egg and vanilla extract until smooth. Stir in the maple syrup thoroughly.
  3. Form the Dough: Add the dry ingredients into the wet mixture, stirring just until incorporated. Then fold in the freshly grated carrots carefully to distribute evenly.
  4. Chill the Dough: Cover the cookie dough and chill it in the refrigerator for 30 minutes to firm up and enhance flavor melding.
  5. Preheat the Oven: Preheat your oven to 325°F (163°C). Line a baking sheet with a silicone baking mat or parchment paper to prevent sticking.
