Instructions

  1. Prepare the base vegetables: In a medium bowl, combine the finely chopped onion, jalapeño, and cilantro. Add ½ teaspoon kosher salt and ½ teaspoon black pepper. Using the back of a fork, lightly smash the mixture to release flavors and blend.
  2. Mash the avocado: Add the peeled and pitted avocados and 2 to 3 tablespoons of fresh lime juice to the bowl. Mash everything together until well combined but still slightly chunky for texture.
  3. Assemble and decorate: Transfer the guacamole to a serving plate. Creatively arrange blue corn tortilla chips on top to form a witch’s hat, spiralized carrots around the sides for hair, cornichon for the nose, radish and stuffed olive slices for eyes, black olive pieces above the eyes as eyebrows, small red pepper pieces as lips, and use capers and chives to add details like hairy warts.
