Ingredients

Units Scale

Marinade

  • 4 garlic cloves, minced
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup fresh lime juice
  • 3 Tbsp honey
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp chili garlic sauce or sriracha

Shrimp

  • 2 lb shrimp, peeled, deveined
  • 1/4 cup freshly chopped fresh cilantro
  • Lime wedges, for serving

Instructions

  1. Soak Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
  2. Prepare Marinade: In a large bowl, whisk together minced garlic, olive oil, fresh lime juice, honey, soy sauce, and chili garlic sauce until well combined. Reserve 1/4 cup of the marinade for basting.
  3. Marinate Shrimp: Add the shrimp to the remaining marinade in the bowl and toss to coat evenly. Let shrimp sit in marinade briefly while you prepare the grill.
  4. Preheat Grill: Preheat your grill to medium-high heat, about 5 minutes. Alternatively, heat a grill pan over medium-high heat on the stovetop.
  5. Thread Shrimp: Thread the marinated shrimp onto the soaked skewers, distributing them evenly.
  6. Grill Shrimp: Place the shrimp skewers on the grill. Grill for about 3 minutes per side, turning occasionally. Brush with the reserved marinade both before and after each turn to keep shrimp moist and flavorful, until shrimp are pink and opaque.
  7. Serve: Remove shrimp from the grill and transfer to a serving platter. Sprinkle freshly chopped cilantro over the shrimp. Serve immediately with lime wedges on the side.

Notes

  • Soaking wooden skewers is essential to avoid burning during grilling.
  • For a spicier dish, increase the amount of chili garlic sauce or sriracha.
  • Ensure shrimp are not overcooked to maintain their tender texture.
  • Serve with a side of rice or a fresh salad for a complete meal.
  • If a grill is unavailable, using a grill pan on the stovetop works well as an alternative.
