Ingredients

Units Scale

Fish and Coating

  • 1 lb. cod, cut into 4 strips
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup (60 g) all-purpose flour
  • 1 large egg
  • 2 cups panko breadcrumbs
  • 1 tsp. Old Bay seasoning

For Serving

  • Lemon wedges, as desired
  • Tartar sauce, as desired

Instructions

  1. Prepare the Fish: Pat the cod strips dry with paper towels to remove any moisture. Season both sides generously with kosher salt and freshly ground black pepper to enhance flavor.
  2. Coat the Fish: Set up three shallow bowls: one with flour, one with the beaten egg, and one with panko breadcrumbs mixed thoroughly with Old Bay seasoning. Working with one piece at a time, first dredge the fish in flour, then dip it into the egg, and finally coat it in the seasoned panko, pressing gently to ensure it sticks well.
  3. Air Fry the Fish: Preheat your air fryer to 400°F (200°C). Arrange the coated fish strips in the air fryer basket without overlapping. Cook for 10 to 12 minutes, turning the fish gently halfway through to ensure even browning, until the fish is golden brown and flakes easily with a fork.
  4. Serve: Transfer the cooked fish to a serving platter. Serve immediately with fresh lemon wedges and tartar sauce on the side for dipping.

Notes

  • For extra crispiness, spray the coated fish lightly with cooking oil before air frying.
  • Make sure to pat the fish dry thoroughly before seasoning and coating to ensure the breading adheres well.
  • If you don’t have Old Bay seasoning, you can substitute with a mixture of paprika, celery salt, and black pepper.
  • The recipe can be doubled or tripled, but cook in batches to avoid overcrowding the air fryer basket.
  • Leftover fish can be stored in the refrigerator and reheated in the air fryer for a few minutes to retain crispiness.
