Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread and Spreads

  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard

For Grilling

  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and have the cheese slices ready. Set these aside for assembling the sandwich.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread evenly.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, and cheese. Add thinly sliced red onion and tomato on top. Then, cover each assembled side with the remaining two slices of bread, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat. Add a small amount of butter or olive oil to the pan. Place the sandwiches in the skillet and cook for about 3-4 minutes on each side until the bread is golden brown and the cheese is melted. Press down gently with a spatula during grilling to help the cheese melt evenly.
  6. Serve: Remove the sandwiches from the skillet and let them rest for a minute. Slice them in half and serve warm for the best experience.

Notes

  • Use chicken breasts of even thickness for more uniform cooking.
  • Feel free to substitute the bread with gluten-free bread if desired.
  • For a spicier flavor, add a pinch of cayenne or chili powder when seasoning the chicken.
  • The sandwich is best enjoyed immediately to keep the bread crisp and cheese gooey.
  • You can add leafy greens like spinach or arugula for extra freshness.
