Ingredients

Units Scale

Lasagna Noodles

  • 12 lasagna noodles

Filling

  • 2 cups cooked chicken, shredded
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Sauce and Topping

  • 3 cups Alfredo sauce
  • 1 cup shredded mozzarella cheese (for topping)

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Noodles: Boil the lasagna noodles in salted water until they are al dente. Drain them carefully and lay each noodle flat on a clean kitchen towel to prevent sticking and to cool slightly.
  2. Mix the Filling: In a mixing bowl, combine shredded cooked chicken, ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Stir until the mixture is uniform and well blended.
  3. Assemble the Rolls: Spread a thin layer of Alfredo sauce evenly over the bottom of a baking dish to prevent sticking. Take each noodle and spread about 1/4 cup of the chicken-cheese filling evenly over it. Carefully roll up each noodle and place it seam-side down in the prepared baking dish.
  4. Top with Sauce and Cheese: Pour the remaining Alfredo sauce evenly over the lasagna rolls. Sprinkle the remaining 1 cup of shredded mozzarella cheese on top to ensure the rolls are nicely covered and will have a golden, melted cheese topping.
  5. Bake: Preheat your oven to 375°F (190°C). Cover the baking dish with foil to keep the moisture in and bake for 25 minutes. Remove the foil and continue baking for an additional 15-20 minutes until the sauce is bubbly and the cheese topping is golden and melted.
  6. Garnish and Serve: Let the lasagna rolls cool for a few minutes after baking. Garnish with freshly chopped parsley to add a pop of color and freshness. Serve warm for the best flavor and texture.

Notes

  • Ensure noodles are fully cooled and dried before rolling to prevent tearing.
  • You can use leftover cooked chicken or rotisserie chicken to save time.
  • Alfredo sauce can be homemade or store-bought depending on your preference.
  • Covering with foil during baking helps keep the rolls moist and prevent the cheese from drying out.
  • Leftovers can be refrigerated for up to 3 days and reheated thoroughly before serving.
