Ingredients

Units Scale

Flatbread Base

  • 2 flatbreads (14.5 ounces total equivalent)
  • 2 teaspoons light olive oil

Toppings

  • 1/2 cup buffalo wing sauce (more if desired)
  • 1 1/2 cups diced cooked chicken (approximately 3/4 pound)
  • 1 cup shredded mozzarella cheese
  • 1/3 cup blue cheese dressing
  • 1/3 cup sliced green onions (3 green onions)

Instructions

  1. Preheat the oven: Set your oven to 425 degrees Fahrenheit to prep for baking the flatbreads.
  2. Prepare the flatbreads: Arrange the flatbreads on a parchment paper-lined sheet pan and brush the edges lightly with light olive oil to help crisp and brown them during baking.
  3. Initial bake: Bake the flatbreads for about 5 minutes until they are warmed through and just beginning to crisp on the edges.
  4. Add toppings: Remove the flatbreads from the oven. Spread the buffalo wing sauce evenly over each. Distribute the diced cooked chicken and shredded mozzarella cheese on top, then drizzle with blue cheese dressing.
  5. Final bake: Bake the flatbreads for 12 to 15 minutes until the edges are golden brown and cheese is melted and bubbly.
  6. Broil for browning: To achieve a nicely browned, slightly crisp top, place the flatbreads under the oven broiler on high for 1 to 2 minutes, watching closely to prevent burning.
  7. Garnish and serve: Remove from oven and sprinkle with sliced green onions. Add additional buffalo sauce and blue cheese dressing if desired. Slice and enjoy while hot.

Notes

  • Use cooked chicken from leftovers or rotisserie to save time.
  • Adjust the amount of buffalo sauce to your heat preference.
  • Broiling is optional but recommended for an extra crispy topping.
  • Blue cheese dressing can be substituted with ranch dressing if preferred.
  • Flatbreads can be store-bought or homemade.
