Instructions

  1. Preheat and bake bacon: Arrange a rack in the center of the oven and preheat to 375°F (190°C). Arrange the bacon slices in a single layer on a foil-lined baking sheet and bake for 20 to 25 minutes until golden and crispy. Remove and set aside.
  2. Prepare egg mixture: In a large bowl, whisk together the eggs and milk until fully combined. Stir in shredded mozzarella, finely sliced chives, and a pinch of crushed red pepper flakes. Season the mixture with kosher salt and freshly ground black pepper, mixing well.
  3. Assemble casserole: Grease a 13 x 9-inch baking dish with cooking spray. Pour the prepared egg mixture into the dish. Lay the crispy bacon slices evenly over the egg mixture in a single layer. Place a slice of American cheese over each bacon strip. Then, place one biscuit on top of each slice of cheese. Brush the tops of the biscuits with some of the melted butter, reserving the remainder.
  4. Bake the casserole: Bake the assembled casserole in the preheated oven for about 20 minutes, until the biscuits start to turn golden. Loosely cover the dish with foil and continue baking for an additional 20 to 25 minutes, or until the center is set and the biscuits are golden brown.
