Ingredients

Units Scale

Sausage Mixture

  • 1 lb. ground turkey (light or dark meat)
  • 1 Tbsp. light brown sugar
  • 2 tsp. finely chopped fresh sage leaves
  • 3/4 tsp. kosher salt
  • 3/4 tsp. smoked paprika
  • 1/2 tsp. crushed red pepper flakes
  • 1/2 tsp. fennel seeds, crushed
  • 1/2 tsp. garlic powder

For Cooking

  • Olive oil cooking spray

Instructions

  1. Combine Ingredients: In a medium bowl, mix ground turkey, brown sugar, sage, salt, smoked paprika, crushed red pepper flakes, crushed fennel seeds, and garlic powder thoroughly using a fork or your hands until well blended.
  2. Form Patties: With damp hands, shape the mixture into 8 thin patties approximately 3 inches in diameter and 1/4 inch thick. The patties will puff up slightly during cooking.
  3. Prepare Air Fryer Basket: Lightly grease the air-fryer basket with olive oil cooking spray to prevent sticking and ensure even browning.
  4. Cook Patties: Arrange the patties in a single layer in the basket, spaced about 1/4 inch apart. Avoid overcrowding to allow crisping. Cook at 400 degrees Fahrenheit for 5 to 8 minutes, flipping the patties halfway through, until they are golden and crisp on the outside and fully cooked inside.

Notes

  • Using damp hands to form the patties helps prevent sticking while shaping.
  • Do not overcrowd the air fryer basket; cook in batches if necessary for best crispiness and even cooking.
  • Adjust red pepper flakes to taste if you prefer less or more heat.
  • You can substitute fresh sage with 3/4 tsp dried sage if fresh is unavailable.
  • Check internal temperature of the sausage patties to ensure it reaches 165°F for safe consumption.
