Chicken and Marinade

  • 2 lb. boneless, skinless chicken thighs, cut into 2" pieces
  • 2 Tbsp. extra-virgin olive oil
  • 1 Tbsp. Italian seasoning
  • 2 1/2 tsp. kosher salt, divided
  • 2 tsp. garlic powder, divided

Garlic-Parmesan Butter

  • 3/4 cup (1 1/2 sticks) unsalted butter, melted
  • 1/2 cup fresh Italian parsley, finely chopped
  • 1/4 cup finely grated Parmesan

Instructions

  1. Prepare Skewers: Trim bamboo skewers so they fit into the air fryer basket if needed. Soak them in water for at least 30 minutes to prevent burning during cooking.
  2. Marinate Chicken: In a large bowl, toss the chicken pieces with olive oil, Italian seasoning, 2 teaspoons of kosher salt, and 1 teaspoon of garlic powder until evenly coated.
  3. Assemble Skewers: Thread about 6 pieces of the marinated chicken onto each skewer. Arrange the skewers in the air fryer basket in a single layer, leaving about 1/2 inch space between them. Work in batches if necessary.
  4. Initial Air Fry: Cook the skewers in the air fryer at 400° Fahrenheit for 8 minutes.
  5. Prepare Garlic-Herb Butter: While the chicken cooks, mix the melted butter with finely chopped parsley, grated Parmesan, remaining 1 teaspoon garlic powder, and 1/2 teaspoon kosher salt in a small bowl.
  6. Finish Cooking: Flip the skewers, generously brush them with the garlic-herb butter mixture, and continue air frying for about 4 more minutes or until the chicken is browned, cooked through, and an instant-read thermometer inserted into the thickest part reads 165° Fahrenheit.
  7. Serve: Brush the cooked skewers again with the remaining garlic-herb butter and arrange them on a serving platter. Serve extra garlic-herb butter on the side for dipping.
